I use my go pro. not to expense and water resistant. they also can be mounted on your kayak. I also use a auto inflating vest. More expensive than a regular vest but light and much more comfortable. They also make manual inflating versions which cost less.
One of the reasons I'm switching to Olympus m 4/3 is kayaking. I take my E-M1(now mkII) and any of the weather sealed lenses I need. I'm careful, and have good insurance. I keep it in a watertight hatch if the water is rough when I'm on the ocean, but that is not very ofteno
As for life vests, find one that's comfortable and doesn't hinder your paddling stroke.
I use a Fujifilm xp waterproof, wifi for quick posting, zoom. For life vest...Go to Dicks or other big box sporting goods store. Try some on then buy online for better price.

Spray skirts spook me, I plan on keeping the wet side down, only flipped one boat in the last 40 years, but if I do I want an easy out without thought, not taking a kayak out where a spray skirt is necessary anyway, that said I paddle a big stable Manatee tandem even when alone, it's not going over, life jacket yes spray skirt no, isn't even made for mine, would get in the way of fishing or shooting anyway.
Go pro cameras are perfect, small in size and waterproof. Can take photos or video.

I use a spray skirt if I want to go play in the waves, but I probably won't have a camera with me if I'm doing that. My kayak rolls very easily, so I'm not too afraid of flipping. Of course, that makes it less than perfect as a platform for photography.
Learned to roll many years ago when I was whitewater kayaking a lot. Don't do that anymore. One too many near death experiences, and I'm not getting any younger.
I took a self rescue class when I bought my sea kayak. Practiced rolling, and getting back in the boat if I came out. A good idea for anyone new to kayaking. Used to do a drill where I'd capsize, and get back in the boat while still upside down, then roll back up. Did that in a pool we used to practice in, which made it easier, but of course the boat would take on a lot of water. Also learned to roll without a paddle, using two hands cupped.

Olympus TG-4. Not that expensive, waterproof, WiFi, GPS. Be sure to get the float attachment since most cameras do not float and the TG-4 is no different.

The auto-inflate life jackets are great. Less bulky, more comfortable, however more expensive. Any marine related retail sells them. They are quite popular with kayak enthusiasts.

That would depend on which store it was bought !wall mart , Canadian tire , London Drugs all sell them ,and all there life jackets are made in China, every one is designed to fail ,

I use a Fuji XP 55 waterproof, dust proof and shock proof camera when I go out in my kayak. It has a 5X optical zoom and I have not had any problems using the LCD screen on sunny days. I have a float strap on it in case it should go overboard.
