D7200 has better image quality up to ISO 6400. Thereafter the D500 is clearly better, not to mention its advanced focusing system and ability to take numerous images in rapid sequence. Should be great for sports and birding where it has a clear advantage.

I like having two good cameras. Maybe it's just a security thing, but if there is a problem with one, I still have a camera. Also, I can go out shooting with a tele on one and a W/A on the other. I have two of the same body, so controls are identical. Look on ebay to see how much the D7200 is selling for. Go down the left column and check the "Sold" box
When I got my D500 I gave my D7100 to my son since I also have a D810 and a D3s
Like others said, for a backup!
If your serious about photography, it's a must! Cellphones are only good backups part of the time.

Unless you really need the money, keep both cameras and buy a Hold Fast Gear Money Maker strap. You will look like a cool photographer.
One thing is certain. You have the first and second best Nikon DX cameras, D500 and D7200. Adorama was selling refurbished D7200 cameras for $769 in past weeks, and Nikon USA has them new now for $1049.00. Body only from both vendors. I would keep both. If you upgrade to full frame like a D810, I would keep the D500 and sell the D7200.

If you do a lot of photography, you should always have access to a backup camera. This way, you can have one camera in the shop being repaired and still have a camera for your use. Good photographic opportunities don't stop because your camera is in the shop. Also, I like to carry a 30-70mm on one and a 70-300 or so on the other when I am out shooting. That way I don't have to stop and change lenses while missing the shot.

Keep both for back up. Convert the 7200 to infrared. Several online service can do this.
I would sell the older camera body and apply the money you get towards a full frame camera body like the D610 or D750. Then you'd have the best of both worlds. The FF for portraits, landscapes, low light etc., and the crop body for sports, wildlife, macro etc.

I have two cameras, can't have too many.
Especially, it is a good idea to have a back-up if something happens to one of them.
