Valley of Fire and Red Rock Canyon have a road that goes through them. There are side drives and parking lots. There are trails you can walk if you want to. If you go in the summer months make sure you have water with you.

Everyone has the right suggestions. Another with wonderful
photo ops is a pontoon boat trip down Black Canyon. The
trip starts from a point just South of Hoover Dam, includes
a nice box lunch and then bus ride back to one of the hotels
almost out to the Dam. A little different and great fun.

both you can get good pictures from the road but walk ina half mile and the view changes.
