Also:
Coronado Island - take the ferry or go the long way out through Imperial Beach along the Silver Strand beach. Or take the Coronado bridge.
And for that matter, take a two hour harbor cruise and see the Navy, along with whatever commercial vessels are in port and sea lions and plenty of sea birds.
Mt. Soledad - drive to the top for the views and the war memorial.
Chula Vista Nature Center.

I definitely have that planned since we are staying at NAS North Island. I also want to get a nice evening view of the Coronado Bridge and downtown. Is there a good vantage point for this?

In the general area of the Ferry Landing on the San Diego side of Coronado. You can move along laterally to find a good view of the city, and the bridge will be to your right. There's also a park along the shoreline nearer to the bridge that you can go to as well.

Don't forget Coronado and the Hotel Del Coronado, a classic building you will recognize. The view of the SD Skyline across the bay is amazing. I live in SD and you can't go wrong with any of the suggestions. Torrey Pines State Park is the winner for hiking scenery but pay the extra few bucks and drive to the upper parking lot. Take the trail to the beach.
