If you don't want all the extras they can be checked no during Custom Install as opposed to Express Install. Also The updates can be turned off and on manually through the power shell. I updated yesterday and turned off updates. I think it works fine now. Adobe CS6-64bit, Stellarium, Open Office, my Canoscan 8800 scanner, my HP laser printer, Chrome, desktop icons, all were there and working on Win 10 64bit. Don't want any updates, no feed back to MS, no tracking, MS Apps, ad choices, bells and whistles etc. All those were turned off in the custom install.
Here's how to turn updates off and back on:
{Run a cmd.exe command prompt as administrator.}
{From the command prompt window start up a Windows PowerShell}
C:\windows\system32>PowerShell.exe
Windows PowerShell
Copyright (C) 2014 Microsoft Corporation. All rights reserved.
{Enter these three commands in this order in the power shell.}
PS C:\windows\system32> stop-service wuauserv
PS C:\windows\system32> set-service wuauserv -startup disabled
PS C:\windows\system32> get-wmiobject win32_service -filter "name='wuauserv'"
{System will verify updates are disabled}
ExitCode : 0
Name : wuauserv
ProcessId : 0
StartMode : Disabled
State : Stopped
Status : OK
....{To restart the windows automatic updates run a cmd.exe command prompt as administrator. }
{From the command prompt window start up a Windows PowerShell}
{Enter the following 3 commands in the power shell in this order}
PS C:\windows\system32> set-service wuauserv -startup manual
PS C:\windows\system32> start-service wuauserv
PS C:\windows\system32> get-wmiobject win32_service -filter "name='wuauserv'"
{System will verify automatic updates are back on}
ExitCode : 0
Name : wuauserv
ProcessId : 916
StartMode : Manual
State : Running
Status : OK
{Exit the power shell and the cmd.exe window ...}
PS C:\windows\system32> exit
C:\windows\system32>exit

The inability to turn off updates ONLY applies to Home versions, as those are the slackers who often don't keep their updates current and cause excess trouble shooting problems for Microsoft. So, not sorry and not surprised to see Microsoft mandate full update control.
You have the ability to control updates on the Pro versions of Window 10 upgrades which would be automatic on the Pro versions of Windows 7.
Not as bad as some seem to have misunderstood.
