Nikon, Canon, Sony etc. Just pick one and learn to use it correctly (which is not as easy as it sounds) and you'll do fine. Put some money and research into your lens choices because that will have more to do with the quality of your pics than the body you select. The body, for the most part, is all about features and flexibility it's the lens that create the shot. I know, I know the sensor makes a difference and so does this and that but if you stick with one of the top tier brands as I said you'll be fine. Go to a camera store pick them up, hold them, love them and see which one loves you back and write your check.

It might have something to do with what picture style you have chosen and if shooting RAW or JPG. If shooting JPG and using a picture style like Landscape, your captures will have more pop. If shooting in RAW, the picture style has no effect. Shooting RAW captures an image and saves it on your card with no changes except for white balance. You can change how the picture looks by changing the white balance to one of the pre-defined choices, or use a custom white balance to change the image.

I have Canon equipment, but believe it is better to have the camera set to take fairly "flat dull" images to reduce clipping, then to make corrections in PP.

Set your camera to "vivid." They will not be flat or dull.
