Would P 600 be considered a P&S? How does it compare with P 7800?

Don't over look the Canon G series.
You know the canon menu system and I would stick with it. The G16 is a marvelous camera and many a pro uses it as a back up. Look at the DPReview on it. I have the G11 and it is about all I carry now.

There are no official terms for the different kinds of cameras so people can disagree about what to call a particular camera. The P600 is a bridge camera which is also called a superzoom or an SLR-like camera. The P7800 can be called a high end P&S or a compact camera.
The P7800 has a 28-200 f/2-4 lens, a 1/1.7 inch sensor, an EVF (electronic viewfinder), a hot shoe for a flash, a built-in flash, and it will fit in a large pocket. I keep mine in a jacket pocket or the leg pocket in my cargo pants, or in a belt case.
The P600 has a much longer zoom, something like 24-1000+ mm. It's lens is slower and its sensor is smaller (1/2.3 inches) so it will not be as good in low light. It is not at all pocket size. It's better for shooting sports or wildlife where you need a long telephoto lens. It has an EVF, but it does not have a hot shoe so you can't use an accessory flash. An accessory flash allow the use of bounce flash which gives a much nicer and more natural light than direct flash.
Both cameras can be used fully auto, fully manual, or semi-auto. Both have their advantages which I tried to show above and both are very good cameras.

The lumix DMC zs40 has both, plus a 30x zoom, plus really good image quality for a decent price.
Along with my Nikon D3200 DSLR I have the Nikon P600 point an shoot which has a 60x optical zoom which is the equivalent to 1443mm. Takes great pictures! And is well within your $500 budget.

Here is the Olympus E-PM2 micro 4/3 mirrorless. Atop it is the tilt EVF viewfinder VF4 (list VF4 alone-$289 at Olympus site). Lens 14x42 Zoom IIR. 1149 shutter count. VF4 is 2.2 million pixel EFV.
Smallest PEN in the Olympus Lineup... Image quality up to EM1 standards.
Pic shown for relative size 12 Fl Oz Shasta.
16.1 Megapixel (Same sensor and process engine as in the OM-D EM1)

How small ? I still like my Nikon P60, which pop up on ebay as used, factory refurb, and occasionally, new...and uses 2AA, and fits in my pocket...only 5x, but works!
