Stef C I shoot raw because it allows me to recover blown highlights where as jpeg doesn't. Raw simply put contains more information than jpeg. The drawback is that you have to process raw files and the camera processes jpeg.
It's about lossy vs. lossless. RAW files are lossless, JPG files are lossy. I think there is some connection there, don't you?
