And I have ridden the Rockin' Roller Coaster with my camera gear in the backpack, tucked under my lower legs, straps round my legs! It was fine....but it took several trips before I had the nerve to do that.
I wouldn't think of going without my D800--the lens I would use by far the most would be my Sigma 8-16--(I know this cuts my image size--but it is still large)--we go there about twice a year.

I took my D800 with a 24-70 lens and my entire family (15 of us) last October. It was not too heavy AND I got a lot photos I will cherish for ever.

I'm a frequent visitor to Disney World...I'll take my 7D if I'm not planning on riding any roller coasters or water rides (the lockers are kind of pricey). Otherwise, I bring my much smaller, waterproof Pentax. There are so many beautiful things to take pictures of at the Disney Parks that it's worth carrying the DSLR.
Just returned from Disney for the fifth time. I purchased a Memory Maker card from Disney online before I went and boy was I glad! I usually am never in the photos because I am always taking them. I highly recommend you look into it before you go as it is less expensive to purchase.
Even though I have a Nikon D7000 and several lenses, this trip I took my Nikon P310. I got great pictures, very sharp and great in low light and easy to carry. It rained 6 out of the 8 days we were there so being able to not have to worry about keeping my camera dry was also an asset.
Take your ponchos, keep doing all that can be done and have a great time.

I took my D800 with a 24-85 a few months ago to Disneyland and would not have been without it. Take it.

The best option is to bring equipment for all instances and use a Disney locker to store what you're not using. Walk the park and look for ops and return later with appropriate equipment.
Haven't been to Disney World recently but I go every year to Disneyland. I carry my 5DMkiii on an Optech sling strap and I can go for 14 hours without any problems and I'm an old fart. It hangs at hand height which allows me to use my hand to steady it as I walk around.
DON'T even consider using a neck strap like the OEM strap that comes with the camera. You won't make it through the first day.
I carried my Kata Bag FULL a couple of days this last trip and figured out the water rides do not have plastic bags big enough so some equip got pretty wet. Glad I had my d700( Have an 800 now) so the wildlife images were outstanding-- absolutely to the Animal Kingdom as Opus suggested..Best vacation pics in a long time with my kids especially ..Coco Beach is a good day trip also-- you can see the Cape--pretty cool

Went to Disneyworld in April. Took my D800, my 24 - 120 3.5; 85, 1.8, & SB900 flash.
Used a shoulder strap, did not tire my neck out at all. and of course a back pack.
Great results, did not even use the 85 1.8. got some fantastic photos of my granddaughter and all the sites
Also took my Coolpix 9200 for my wife to use. Worked out really great.
canon s110 point & shoot it can do what the big boys do.....
