I agree with the people who suggested that you take a look at the Pentax K-70. Lots of features, sharp image quality and very durable. I’m a Canon guy, but use my K-50 when I want to be inconspicuous.

I think the Tamron 16-300 fits the bill. After you use it and hopefully find a specific type of photography you're more interested in, you can invest in "prime glass". Just my opinion.

Sounds like you've had a challenging ordeal. The good news is the Canon support is superb. I'm sure they will make sure the camera is up to standards.

I have the Manfrotto 294 and am very happy with it. For the uses you described, I think you'll be satisfied with it. I'm 6 feet as well and I can use it with any head attachment comfortably.

My favorite lens is my 70-200 2.8 IS II. It's great in low light as well as for sports and portraits.
I shoot Canon, but I would think it's the same with Nikon. Besides assigning the Bbf to the rear button, you also have to make sure you disable the auto focus function on the shutter release button.
Not sure if this will make a difference to you, but the 7D MII has both CF and SD card slots. Consequently you can have an automatic backup. This in itself my not make the upgrade worthwhile, however because of the additional SD card, I'm able to use my Toshiba FlashAir sd card. The FlashAir's wifi capabilities allow me to instantly view and transfer images. I use this capability for two things. One is to show clients initial frames to help make them comfortable for the session. The second is to have them do initial picks for the shots they like at the end of the session. Being able to do these two things on a tablet truly makes it a wireless tether. This is a huge time saver. I actually use the FlashAir in my 5D MIKE as well.
Most venues will not allow a lens as long as the 70-200mm. I would consider the 7D and 28-300mm Tamron. Sitting as far back as you are the 24-70 and even the 85 will be hard to get good action shots. The 7D gives you a nice frames per second rate and the 28-300 will give you the reach you need. I'm assuming you have the VC (stabilization) version.
