To bring out surface texture of your subject you need light to hit it at an oblique angle. That is, the light must rake across the surface. If the light strikes the surface straight on, it will tend to flatten your subject. Here are some examples. In the first one, the oblique lighting was already there. In the other two, I used a remote flash handheld at an oblique angle to get the effect. The tombstone needed flash anyway because it was on the side opposite the afternoon sun.
