I'd suggest moving to Adobe Bridge, it has all of Lightroom's tools and features, but uses the Operating system of your computer. I've moved from Lightroom to Bridge in the past 12 months without an issue. Just think, no more 'Missing File" messages or catalog back-ups.
Bridge can also read the XMP sidecar files to maintain the Lightroom adjustments you made.
Before you offer comments, find someone with an iPhone 13 Pro and take a Macro Shot. It is an outstanding image.

Im ruing a 2019 MacBook Pro with Big Sur and have no Lightroom (latest version) issues.
I have a 2019 MacBook Pro running with 16 G of Ram running Lightroom and Photoshop, it works fine. Certainly if your using Excel/Work and Powerpoint 16G will suit your needs.
Regarding the Intel or M1 chip, I'd guess the support life of the Intel version would be shorter than the M1
I have a buddy, who I've been helping move his Lightroom and Photoshop to his new M1 mini. the mini has worked well. As advertised - very fast.
