A fine dish to make and tasty as well! Photo No.2, shows a medium red onion cut rough, with two celery stocks cut diagonally into small pieces. Season heavy with: oregano, sweet basil, cracked black pepper, a sprinkle of turermic, Italian season. Sauté in pot with coconut oil 4 to 5 minutes mixing well.
Photo No.3 shows after sauté is done, add 5 chopped garlic cloves mixed in. Now photo No.4, add 1/2 cup Chardonnay White Wine, 3/4 can of low sodium chicken stock, two heavy tea spoons of tomato paste and bring to simmer while mixing. Add one cup of white rice soaking in warm water in strainer, (I used Jasmine Rice) add to veggies and mix in liquid.
Bring to a boil and add Mussels, cover to pressure cooker and cook on first red ring 7 minute! If you are using a pot on your stove top simmer rice at least 20 minutes, then add Mussels to rice and cook no longer than 10 MINUTES OR LESS covered !!!
Added to dish is my favorite salad, Plum Tomatoes cut coarsely, with Calamata Olives and cubed Feta Cheese seasoned with oregano, sweet basil, cracked black pepper, and dribbled with olive oil! Hope you try it! AP
