I am so jealous! ! I know that is a sin, but brisket and my Weber grill are a match made in heaven. I'm glad the driver wasn't killed. But lucky for you and your neighbors! I smoke meats in my 22 inch grill, meat on one side, wood and coal on the other. Lid on. I add wet chips and coal every hour or so. Up to 12 pounds or so. Otherwise You might need a bigger one.

You don't need a smoker if you are only going to cook them one at a time. You just need the right way to get it done. Let me know if you and I can tell you the easy way to do it. Pitmaster from San Antonio Texas

My husband's family are Texans and man oh man, brisket is the best with that dry rub and woodsmoke. But where I'm from........ Pork butt is the thing to smoke. I even do turkeys on my Weber. I would have had a bigger cooker, but we rarely have that many to cook for anymore.

Get a heavy duty plastic garbage bag. Place in the sink. Add Brisket, chopped onions, garlic, lemons, oranges (including the peels), oregano and other spices you like. Add some vinegar, and enough orange juice to completely submerge the meat (leave fat on, do NOT trim). Put in the fridge for at least 24 hours. Best bet is to slow smoke (fat side up) until medium rare. In final half hour, cover with BBQ sauce OR this. Take mixture from the bag and put in a blender with just a small amount of the juice. blend until smooth. Reduce on slow heat is still not a paste consistency. Use this in place of BBQ sauce. Always add sauce at the last par of cooking. Can cook in an oven, but won't be nearly as good. Enjoy.... John

DON'T think about buying a smoker, Lorima....Just go out and buy one. You won't regret it!!! Smoking a brisket is the best way to go. Bar none!!!

A lot of trouble to cook, but one of the choicest meats in the world prepared right! I still can taste my first bite of 18 hour brisket done on a farm near Nashville about 30 years ago.
Happy Days!!! I experienced a similar truck crash when I was a kid growing up in rural WV. It was carrying frozen turkeys and I guess the driver called town (15 miles away) and asked for a truck to come get the turkeys. By the time the truck arrived there were no turkeys to carry away and no one knew what happened to them! Every family ate good that Thanksgiving!
