We trim it til it folds. Makes it very lean and tender. Our method is super simple.

WOW is correct! Hoping for a speedy recovery for the driver. Don't have much to add other than I read through all the comments and many brought a smile. I'm not a brisket person, but this has been so interesting that I will make it a point to have some in the near future.....someplace. My mind has envisioned a news alert...…FLASH...."There appears to be an unusually large caravan of Ugly Hedge Hoggers descending upon Colorado from all corners of the United States & beyond! Something like that happened about 25 years ago in Maine....except the truck was carrying live lobsters! My husband's family took home a few buckets of lobsters and had a feast.

I also use my (electric) smoker as a slow cooker, low and slow BBQ, and have cooked almost anything that can be cooked in it. The big smoker doesn't allow for this, due to design.

Slow (225 degrees) cook it for about six hours. It’s delicious. Mix it up with fried potatoes, onions, and green peppers. Awesome 👏
