Summer? York? Tourist Hordes? Sorry mate, they go together in the UK no matter where you go.

Great photo ops abound within the city, great architecture, old buildings, the wall and as for the Minster, not sure if cameras are still prohibited, check with them first.

Selby Abbey is marvelous - just 19 miles South of York.
Beverly is a lovely town, with an awesome cathedral near York.
Fountains Abbey is wonderful and close to York, Rippon with its ancient Cathedral is very close to Fountains Abbey.
Riveaux Abbey is very interesting, and close to York.
Robin Hoods Bay, Staithes, Filey on the coast
Castle Howard is one of the finest great homes in England, and now allows photography inside!

All excellent advice above. Any direction but south-south-west and you will be pleased.
Bronte fans may wish to visit the rectory at Haworth, though it is not particularly photogenic.
I have a soft spot for Ripon, and Fountains Abbey should not be missed:-

The suggestions for places to see and visit in York are excellent. I've been there a couple times and agree with all the suggestions. Yorkminster is magnificent (from the ground) but from about 3000 feet in the air, not so spectacular. I took this picture from a sail plane I was flying with a friend who is (was?) a professor at the University of York and an instructor at a local glider club. Sorry the focus isn't the best, but I think the camera was having trouble with deciding to focus in the distance, or on the canopy of the sail plane.

Don't miss North Yorkshire Moors Railway for steam trains. Fountains Abbey is fabulous and anyone visiting around September/October gets a superb bonus with the deer rutting in the deer park. Even if you don't see them fighting to be top stag their antlers are fully grown then. The RSPB reserve at Bempton Cliffs is worth a visit for bird photography and around the second half of June is a fabulous time.

I concur on both Cathedrals. The often have music competitions outside the York Cathedral. Great fun to watch, listen and photograph.

Not sure if they allow cameras in the Copoergate dig, but it is worth going even if they don’t. Going to the coast will give some pretty impressive locations to shoot from.

The Parsonage just out of town on, IIRC, the A19 is a great place to stay. Good stuff to shoot too, but you have to stay there to shoot there.

There will be hordes but most are respectful. If you don't spend at least a half day at the York Minster, shame on you. Since you haven't said what your primary interest is, start walking the streets and do some people watching. Get on the double-decker and see the town. Walk the wall. I'm sure you will find lots of opportunities for photography. The language is close enough to ours-talk to the people. Eat some 'pub grub', it's good stuff. Enjoy yourself and take your camera along. Take two camera bodies and two lenses. Don't take a tripod. One lens should do it if you take an 18-200 or 250. The second body is your insurance policy. Lots of batteries and I would suggest 16 mp class 10 memory discs. Have a great time!
