Improved dynamic range that is noticeable especially with high ISOs or in low light, better low light performance both in terms of focusing and picture quality, deeper buffer and wi-fi are the most obvious improvements provided on the 7200. However, in good light it might be impossible to discern a performance difference.
You are describing a valid difference between the D7000 and either the D7100 or the D7200. In terms of dynamic range, high ISO and low light the D7100 and D7200 are virtually the same. The D7200 has a larger memory buffer.
