Sounds like a great trip. My husband and I did the New England states last fall. Check out Mystic Seaport in Connecticut while you are in Connecticut.

I would definitely go to the Hudson River valley, in the mid-Hudson area. Dutchess and Renssalaer Counties on the east bank have scores of beautiful spots. There are number in the west bank also.
The Hudson River Valley school of painting became popular with artists for excellent reasons.

While in North Carolina visit Asheville and Biltmore mansion .Cross over the Smokies to Cades cove.

It's really the not the best time for Texas, ( March-April when the bluebonnets are in bloom ), but there is still some awesome
scenery in the hill country.

Also, you might want to check out the Palo Duro Canyon State Park up near Amarillo depending on your route thru Texas.

A couple of observations: I am a retired over the road trucker, thus, have traveled your itinerary. You're biting off a mighty big task! But don't let that stop you. I doubt you'll get it all done, but you'll enjoy what you do see. It looks to me like you'll be leaving from N. California? You didn't mention the Dakotas, both of which are full of beautiful landscapes and vistas. Bad Lands of S. Dakota of course and Mt. Rushmore. Minnesota? Someone from the Goffer State will have to help on that one. I live in Wisconsin and the first thing that comes to mind is Lambeau Field in Green Bay; hallowed ground for football fans. You want something off the beaten path? A place called Gibraltar Rock in Columbia Co. One heck off a climb, but worth it. The neighboring County of Sauk boasts the Baraboo Hills and just out side of Baraboo is a lovely falls called "Pee Wee's Falls, not well known, very pretty. Have fun, and above all, be safe....

Not exactly on the coast but you won't be too far off from Niagara Falls. If you've never seen it , could be worth the time to deviate from your course.

When in upstate New York, vist both Letchworth State Park and Stony Brook State Park. Letchworth is the Grand Canyon of the east. Also, of course Niagara Falls and Make sure you have what you need to go ever to Canada. Study what is available to see all it offers including the walking trips around and under the falls and the Maid of the Mist and Goat Island.

When in south eastern Tennessee, along with all its beautiful mountains take the tour at the Jack Daniels brewery. They can't give you some samples of Jack's great whiskey, because they are in a dry county (unless they changed it in the last 25 years) but they will serve his lemon aide.
