Seeing as he wrote "We were looking at a Canon DSLR Rebel," that implies she showed some interest in a Canon DSLR. Seems like a Rebel model Canon DSLR would be fine for her.

"We" could mean him and anybody else. Could be his wife or anyone. Doesn't necessarily mean his Granddaughter. This is how misunderstandings happen.

Don’t overlook the Canon SL3, fitted with an EF-S 18-135 f3.5, makes very versatile rig. Relatively small, light weight, nice features, less complex than a full size dslr.

Also give Olympus a look. The em-10 is affordably priced and with the pancake lense is easily carried. Of course any of the extensive line of micro 43 lenses will work on that camera if her future interests grow. Olympus optics are excellent.

I would get her the same brand as you. If you both have DSLRs you can share lenses and you can mentor her.

Wow! I didn't know that. Thank you for educating me on Ugly Hedge Hog Website Access. I'm not one to violate laws. I even drive in the slow lane.
With that being written, I am a firm believer that if a someone shows an interest in photography, I shall do my best to impart my knowledge. This personal policy is a hold-over from my days as a Scoutmaster. I can tell you all the Merit Badges that I helped boys earn over the years.
There was never any age or rank requirement for earning this or any Merit Badge. Boys were expected to earn specific Merit Badges commensurate with their goal towards achieving the rank of Eagle Scout.

I think we can all agree that Nikon is one of the best camera makers ever. I happen to own both Nikons and Cannons.

I hope you will consider the Fuji System. The high quality jpegs will allow her to make images without spending a lot of time post processing and more time shooting.

Nothing wrong with SL but Mirrorless are taking over so I would start her with Sony 6000. Can't beat the price and the quality for a beginner camera. Given the camera specs she can grow up with it into more advanced photography.

Yes, Dick, granddaughters are the worst. For middle school yearbook staff duty, she inherited my old Sony A1. Somehow, it stayed with the school. OK, I retired from the same district...I'm a supporter. When she started high school, though, she got right back into photographer duties on yearbook. Said "I need a good camera." So I began searching for a good used camera...not a birthday gift. Ended up with 2, a T5i and a T6. I recommended the 5i, but she liked the 6. Gave her a decent, versatile zoom. She hasn't yet raided my bag for anything more. But with your note, I am forewarned!

I shoot Nikon or Sony; but I bought my granddaughter a Canon M50. It has a crop sensor and interchangeable lenses. Camera and kit lens was $400 from Canon refurbished. When it came, it looked and worked like brand new. It was between that and the Sony a6400 but the Sony was quite a bit more. I chose the Canon because it was newer and had a better touch screen (not important to me; but I thought it would be important to her).

I also think a small DSLR like the Canon Rebel or Nikon 3300 are nice beginner cameras.

I have used a Canon T3 and now have a Nikon d5200. I actually prefer the Canon. Find it gives a much sharper picture.

I would take a good look at the Nikon 3500. It is an excellent first camera
