It would be the new Nikon D4s with its low light and high frame rate. And the lens to have would be the 70-200 f/2.8.

For many years ( and continuing ), I shot a Nikon F5 for fashion and glamor, the main lens a 105 2.5. I didn't like zooms, but I did on occasion use the 180 2.8, even for headshots. Twice I rented the 300 2.8. If I had been told ( unlikely ) that I could shoot that day with only one lens, it would have been the 105.
Since I have been shooting a lot of dance in the theater during performances, I did buy my first digital camera: The Leica V-Lux 4. It's a honey. The zoom reaches the equivalent of 600 mm, with the aperture remaining constant at 2.8, if desired. I'm still a retard in digital, so I'm not qualified to compare this camera with the Nikons you mention. But the glass is authentic Leica. The camera is small and light and easy to use. I don't use many of its features at present. For theater work, I set the ISO at 1600 and AP at 4.0. I work mainly in monochrome right from the start. Noise is no problem. ( I'll soon run a test at 3200, and maybe beyond. ) In short, I'm having a great time with this camera.
It normally retails for about 1,000.00. Panasonic sells essentially the same camera for much less.
For special uses -- nudes in particular -- I have a D90 adapted to infrared.
As others have said above, look round, take some cameras in hand, talk to informed sales people , and enjoy yourself.

One Camera...think about one of the new Mirrorless cameras. Lighter than DSLR with good quality photos.

I'm sure glad this question is hypothetical but if I could only have one I'd buy a Nikon P600.

As someone who's been in a few earthquakes of large magnitude I've thought of what I'd take with me if I had to flee. As far as cameras go I'd take the smallest that I own because there'd probably be a few other items I'd try to take as well. One small camera would be better than no camera!!!
