I don't think you are understanding me. I'm not talking about individual custom settings. I am referring to Settings A and B where you can load indiv settings then recall A or B at any given time and use those preset settings. The problem, if I use preset A (already configured) in real time and I'm at basketball game today and want to create a custom white balance, I cannot set it and use preset A at the same time. Remember A was created at an earlier time with all my favorite settings for..lets say sports. But custom white balance is a real time setting not to be anticipated. I should be over to update custom WB using A or B.

As for the noise at high ISO it is looking a little worse than my D500 on my computer. I'm using med sized jpg. I open to suggestions on how to improve this.

Thanks for the info. I will try the white balance changes. I have been shooting in jpeg for sports thinking it would make the files smaller and the write buffer easier to handle. But sports shots are no good too grainy, or too smooth. I can't tell if I'm missing the focus or it's just the grain (maybe both). I'm thinking I will have to shoot raw compressed. i've been testing out expandable spot and lock on expandable spot.

I have a new Sony a7RIII and an f4 24-105 lens and I still use my Nikon d500. I've sold all but my Nikon f2.8 70-200, f4-5.6 18-105, and macro f2.8 100 lens. For my job I shoot portraits and high school sports. For the portraits I am required to create a custom white balance. On my Nikon I use custom memory setup for my settings, and recall sports or portraits memory cells for my work.
With the Sony I can also create custom memory for my settings but after creating them I can't set a custom white balance! I get a not allowed with memory settings error! That's a bummer to say the least. I'm not paid for retouching. So I don't intend to to redo the AWB in photoshop. This is a bug, at the least an oversight.

Also, I haven't done extensive tests, ( I'm not a pixel peeper) but If I shoot raw my shots from either camera are pretty good at high ISO, say 20000 (High School gyms are notoriously known for bad lighting). But if I shoot jpeg fine, the Sony pics look awful when reviewing in camera. I only tried this once and will investigate more closely. I'm hoping I have some setting wrong.

Has anyone had any issues/growing pains with any camera type or make transitioning?

Exposure compensation (EV) is usually used with shutter or aperture priority. Since you are controlling less you can modify brightness with EV. In manual mode u can change all 3 exposure controls: aperture, shutter, iso. No need for EV change.

I agree that you should rent or at least try to get a feel for the different models. If you get a Canon mirrorless and hv canon dslr glass, adaptation may be ok if your not shooting for fast autofocus (needed for shooting sports/birds).

If you will be shooting primarily during the day, I’d go for the 18-105. I’m transitioning from Nikon to Sony. I still have my d500 and several lens, 1 of which is the 18-105. It light and compact. Great Walking around lens.

I am in the process of switching from Nikon to Sony. I have a Nikon d500 that I’m not quite ready to part with. I use it for work. But I have sold all but 3 lens. I’ve even sold my beloved 24-70mm 2.8. With the proceeds and savings, I’ve just purchased an a7rlll, an 85mm f1.4 prime and a 24-105 f4. I’m loving the camera and will post pics when I hv some time. I had previous Sony experience with an a6000 and I think Sony has progressed nicely. Focusing is fast and sharp, and what u see is what u get in evf. I will be seeing in the next few how it handles with sport shooting.

You want to stay with U.S., non grey market gear. Make sure you can get a US Canon warranty, and register your gear. Grey market items are cheaper but will not be fixed by US Canon dealers should you need it.
