If you think about it, humming birds are stationary in flight so its a matter of how much blur motion you want on the wings. I like to shoot mine with stop action so you can see the feather detail in the wings, therefore most of my shots are above 2000. That said, I end up with more iso noise as a penalty. I have shot a few in flight, but that reticular profile isn't as pleasing to me as the hover. Do it the way that pleases you.
