Honestly, this is a hold-over from film cameras, when you had to develop the film before you could see the actual results.

Personally, I've never made much use of this capability simply because I developed a style dependent on context, so I use "comfortable" apertures like f/5.6, where exact DOF is less important.

What is it with weight? Why would you want to lug it around with you? If you cannot 'balance' a long lens, do what we did thirty years ago and use your left hand to cradle the lens. If you cannot hold your system stably, get a stabilized system. I find that most people who have trouble taking verticals rotate the camera counter-clockwise instead of the easier clockwise.

It's not necessarily cheaper if you need to purchase another camera anyway.

The other side of what is actually the same coin, why lug more weight around with you than you need to? Save all that energy for more productive uses.

I hear that people need heavier bodies to 'balance' heavy lenses. Well, thirty years ago we had much lighter bodies, but we knew how to cradle the lens in the left hand while holding the body with the right hand. Apply the right amount of force - and instant balance!

I hear that people need heavy bodies for stability. Well, that is why most manufacturers "stabilize" their systems!

This is not whining - just stating a fact. At age 70, there is only so much weight I can lug on a multi-mile birding "walk" {which sometimes includes climbing which requires that my hands be available} with my wife, and I adjust what I carry to be consistent with that.

added: and I don't see any point to carrying more than I need

One of the reasons threads become so long is that duplicate responses are made. I never respond to a comment until I have read the entire thread, and then I don't respond if someone else has already said what I was about to say. Your "I haven't read the entire thread, but ..." approach is not helpful, IMHO.
