I go to the trouble to get the most out of the stuff I use. I shoot RAW, process to 16 bit ProPhoto color space, and send full 16 bit per color channel files to my inkjet. No monitor is going to accurately display the full range of printable color available with today's photo inkjet, so I make test prints.
Glossy yields the sharpest detail and richest color.
Matte surfaces are more fragile than glossy and don't have as wide a tonal range. When framed with glazing, they suffer the same reflection issues as glossy prints, while lacking some of the tonal range.
Glossy prints will show some degree of "bronzing", but if you laminate your glossy prints with the polyester UV protecting film I use, the bronzing disappears and the print is even glossier and richer, as well as being protected from fingerprints, etc.

For best detail and contrast, and color, I use Mitsubishu Pictrico Glossy White Film. I think it has the best performance of any inkjet printable media. After printing, I cold laminate with a polyester (not vinyl) UV protective film (from Drytac). The result is an extreme high gloss, dimensionally stable, and brilliant print that needs no protective glazing when framed.

A big issue with using a DSLR mounted on a view camera is that the internal parts of the camera (mirror box) block light from the lens when it is shifted off center, so you have a very limited useable angle of view.
View camera lenses were not designed to cope with the high degree of enlargement that 35mm, or even worse, APS-C images require.
I suggest the OP buy a 10-18mm, set it to 10mm and hold the camera level, then crop the foreground.
Edit: Oops, for some reason thought the OP had a crop sensor Canon. Never mind.
