Agreed Gene, and it's the shadows getting trapped in the nooks and crannies that tell our brain what kind of texture we see without having to physically touch the subject. The best way to communicate the important assets of food is to show off the texture through applying light and shadow in an intentional direction. In food photography, it's important to show the light wrapping around the hero, giving it depth and three-dimensional feel in a two-dimensional medium.

You have to understand light. To understand light, you have to become a student of shadow. There are three keys to lighting that will help to make the most of any window: the size of the light relative to the subject, the distance from the light to the subject and the amount of diffusion of the light. Shadows are the key ingredient to create depth and three-dimensionality in our images. Without shadows, we can't see the form and texture of our food.
