In a nutshell, 3 or more photos are taken with varying degrees of exposure value and then the best of all 3 shots are combined into a single shot. So, your meter gives you an exposure value for the scene as it sees it and we'll call that EV 0, then another shot is taken that is 2 stops under exposed and a third shot that is 2 stops over exposed. This allows for the EV 0 shot to accurately capture detail in the mid tones, the -2 EV captures detail in the highlights (sky) and the +2 EV captures detail in the dark shadows. Through post processing the best details from each photo are combined and the non-detailed parts are tossed aside. In your photo, the bright sky, mid tones and dark shadows would all have good detail for the eye to see. As is, your bright sky and dark shadow are lacking detail.
