I don't know about "interesting", but you find trucks at loading docks, truck scales
(the private ones, not the manditory ones operated by the CHP), truck stops (the
biggest chain is Truck Stops of America), and cardlock (private issue credit card)
fueling sites.
Each fueling network (CFN, Pacific Pride, SC Fuels, etc) has a map on-line of all of
its locations (some are unattended: nothing there but a card reader and dispensers).
The biggest concentraiton of cardlock sites in the world is in Barstow, CA.
Truck stops tend to be a little grungy (OK, more than a little!), but some of the
roadside cafes patronized by truckers are nice. And the parking lots are less
busy--your friend might be able to take photos without being run over.
Some interesting places ot take photos in central CA: the Pinnacles National Park
(between King City and Hollister -- two entrances with no roads in between),
Henry Cowell Redwoods State Park (in Felton, near Santa Cruz), Wilder Ranch
State Park (a few miles N. of Santa Cruz), East Pennisula Open Space District
(off Skyline Blvd between Hwy 9 and SF), and Black Diamond State Park
(near Antioch in North Bay -- coal mines from the 1880s and underground visitor's
center in a sand mine open on weekends). And there's another Monarch butterfly
winter-over spot at Natural Bridges S.P. in Santa Cruz (otherwise nothing much to
see -- the natural bridges washed away a while ago).
I think you'd have the most interesting variety of photo subjects at Wilder Ranch S.P.:
Victorian house, horse barn, dairy barn, old adobe, vegetable garden, horses, goats,
sheep, chickens, barn cat, monterey cypress, corral and cabin, old farm equipment,
and miles of hiking trails. Day use only. Pay to park or park on highway like the
locals do. On weekends in the summer there are hayrides for kids. Check webs site
for current information.
Farms are another place where you migth see trucks and farm equipment--but not this
time of year.
