You could probably get reasonably results using the 70-200mm 2.8. Usually, for quality video, you would use a gimbel for smoothness. But you can kind of hide camera movement in the action of the game. Just stick with the action, and zoom in and out when you switch subjects.

Don't expect to just wind up with a finished video straight out of the camera. You'll need to do some editing on a PC to get something acceptable. In the moment you have to concentrate on getting the footage without regard to the finished video! After you get good footage you can concentrate on finishing it into a video.

Do not zoom a lot, don't make harsh, fast movements (its better to miss a few things than to have footage that's not watchable) try to keep it steady and smooth, only switch subjects when it makes sense (natural, logical sequences)! If you stick to that you'd be fine and you can always delete unwanted scenes later.

I use a camcorder for video, but a DSLR can work very well. You have time to practice. Get started!

Suggestions:
Write a script (ideas in sequence).
1. Home shots
2. Family
3. Boy Close ups
4. School shots
5. Coach and friends
6. Practice
7. Going to game
8. Close ups....
9. Game shots
10. Post game interviews
11. Results, Trophy shots
12. Family interviews, can be shot later.
Many of these shots can be still shots.
13. Put together with Imovie, Mac or Movie maker Windows. Assuming you are new to this.
The internet has many suggestions on making home movies.

I did girls basketball on the radio for years. Coaches always have game videos made. Ask the coach beforehand if you can get a copy. Use your camera for before and after shots and insert the game video. Most importantly, watch the game. Deep runs into playoffs are few and far between for most teams. You don't want to miss the game because you are focused on shooting video. Good luck to your grandson!

Being a pro sports videographer for many years, given the importance of this game, I would recommend using a video camera and have a family member take pics with the still cameras. I still use JVC GYX-2B 3 chip 750 line cameras with a 14X lens and run the shutter speed up to 1K, or less, depending on the lighting. You can pan as fast as you want with no image lag. I have used my Nikon D3 with a 80-200 zoom to shoot video, but you are limited in technique and the end result is not the same. While the HQ video pic is great with the D3, it just is not practical to shoot sports with a DSLR unless you are just following the action with a wide shot and slowly pan left to right, with minimal zooms, if any at all!

Idea for you, look into renting a camcorder for the video and take along one of your DSLR for stills.
BUT, by all means see the games!!!

I don't want to rain on your plans, but my state athletic agency expressly bans any others beyond the schools participating from video-taping games, and also forbids facebook live streaming them. There can be charges levied for violating these rules, one of the most unfortunate is the forfeiture of the game by the team associated with the offending video. You'd best be sure your state has no such provisions.

A lot of school districts in CA are selling the rights to stream the games. The state finals are regulated by the Section and you must secure video rights by paying a broadcast fee and no portions of the games may be broadcast until 72 hours after completion of the game and it requires sponsorship commercials to be included for no fee. High schools are getting like colleges in that they want to monopolize the rights to the games for streaming, but without consent, or payment, to the players. They can only demand parents not play any portion of a game on the Internet and cannot stop a parent from taping a game for their personal use. Note: this info is not legal advice and pertains to California. Gee, my media credential won't even get me in to a play-off game; I have to request a Section media pass, or be added to the school staff list! I've been around the league so long that local league games I videotape, they don't even ask for a pass, ticket, or media credential. I find it laughable that network affiliates NBC, ABC, CBS and FOX have to apply for a media pass and can show no more than two minutes of any playoff game during their regular newscast. My how times have changed! Teams used to beg for coverage!
