Agree with Philly. Forth & Federal, 10th & Rising Sun Ave, 6th & Pike, maybe 60 years ago when cheese was sliced, not shredded, the sauce was pushed through a sieve and spices added then applied liberally to the hand 'spun' dough, then baked to perfection (the cheese just bubbling and a hint of tan). I hope it's not nostalgia that taints my remembering the flavors. We also called them tomato pies (not cheese pies) and if you wanted extra cheese you had to ask but most of us preferred not to add that.
I'm now officially in dire need of a good tomato pie and will go up to Norristown area in two weeks for a Philly Cheese Steak and a Tomato Pie. It's only a two day drive. I can visit my sons while I'm there. HA!
