In fact, in any small town, when in doubt, just pull into some local diner, fish pit, barbque or tamale joint and ask your server. You'll get wonderful answers.
Maybe crossing the northern portion of Arkansas would be good: Bella Vista, Rogers, Eureka Springs, Harrison, Mountain View, Jonesboro, then drop down and cross the River at Helena or Memphis ... for real adventure, nothing autumn related, on the Mississippi side, head down Hwy 61 for "bloooze joints" (Clarksdale, Indianola and spooky points in between).
Everything hinges on how much time you have....
If you want the shortest route, you'll probably come down Hwy 65 all the way to Lake Village, then there's a decision to make but, either way, you end up in Vicksburg, MS (pretty cool- but, unless you're a Civil War buff, skip the battlefield- it's interesting but very repetitive and looong... )
Once south of I-10- which ain't far from Breaux Bridge, there's not much "Fall" foliage- there'll be some sugar cane harvesting, and probably some burning of the cane fields... There's a "cajun village" at Lafayette (La-fai-yet) I haven't been to but, looks photographically interesting...
As an afternoon side trip, not far from Breaux Bridge, head down to Kaplan (Kap-laaawn) and have lunch at

On the way back, hit Natchez... another cool place...
