After posting the above, I had the additional thought: are you going to be shooting raw? If so, be clear how you are going to perform PP on those images as Adobe has a lag time including new camera.
Different thought. I have used Canon S95 for years as a pocket carry while hiking out west. Weighs half a pound. Does raw and jpeg and has many of the capabilities that a dslr has. Available used on ebay, even refurbished. Liked it so much I have three in case I drop the primary. use it for city pictures all of the time.

I recommend the Nikon Coolpix B700. I have compared raw shots from the B700 taken with the same settings as my Nikon D7000 using a Nikkor 55-300mm (iso-100 at f5.6, 1/30sec.) lens and a Sigma 15-30mm (iso-100 at f4.5, 1/30 sec) lens, post processed in Photoshop, and I find them to be fairly comparable. I bought my B700 used on ebay in mint condition for $318. The B700 also shoots 4k video. The B700 weighs 1 lb. 4 oz.
I use the Sony RX100 which takes excellent pictures in both .JPG and RAW. It does have a 1" sensor. I do miss the view finder, but there is a screen setting for daylight or bright screen which helps. Auto focus is fast. There are other RX100 models which have different features. I like the size as it is about the size of a pack of cigarettes and fits nicely in my shirt pocket. I use a wrist strap as it is a small camera and one could loose your grip on it if not careful. I also have a case for hanging on the belt which I bought at Best Buy. The features on this camera are good and are all I need for a 2nd camera which is small and light.
The P1000 is big and heavy. The P900 is still larger and 1/2 again as heavy as a Canon SX60 HS. I have the SX50 HS, its predecessor and love it, ‘tho it isn’t pocketable unless you have large pockets. It DOES have RAW available and is MUCH less expensive than either Sony. The maximum focal length is lower, but still quite large. I like to compare cameras on the B and H website, their "compare" feature is quite good. I looked and found each camera (P900 vs SX60 HS) has a little the other doesn't. It depends on what is most important to you.
If there is enough time, go to any store that carries them and see how each feels and how intuitive the menus are. Renting is a better way to compare.
