With the deer picture, I think it was where it was snowing that it is a bit grainy. As for my Yoshino Cherry blossoms I may have been a few inches away from it. The detail was a happy accident. I know what I like to see though and know if I got a semi-good one or a really good one. Maybe I can learn some more in this forum and finally get some great ones!
The noise (grain) is probably caused by the small sensor size with 20+ megapixels and the relatively low contrast in both shots. If you go onto the digital zoom it will get real bad!
