I hardly ever bracket. It is usually as a safety measure rather than with the intent of combining images. Because I learned with Kodachrome, I tend to be very careful about exposure.
If I am going to develop from raw I might bracket in 1 stop increments. If I want to get it into a JPEG in the camera the increments might only be 1/3 stop. When I deliberately do HDR it's more likely to be 2 or 3 stop increments.
JPEG has a lot in common with Kodachrome. There is not a lot you can do with it after the fact, especially if you missed the exposure.
Developing from raw is much like shooting negative film. You have more latitude and you can correct exposure errors more easily. However, with raw you are still limited to about three stops above middle gray (Zones VI, VII and VIII) before even raw blows out. Negative film is the opposite of that.
