I really like the foliage texture and color in the first two pictures. This is my opinion of what might be done based on what I see on my computer.
#1 might benifit from a little post processing, brighten the midtones and bring out the reds in the foliage. Not knowing what editing software you are using I don't know how to help you accomplish that. I use Photoshop and would do most of the work using curves. I think that croping a little off the left side (the dark tree portion) and a little off the top to bring the eye down to the colors migth also help.
#2 Again I would brighten the colors up using curves, however since the water in the foreground is already blown out It would help to have a program that allowed you to work in layers. A selection could me made of that water area placed on the top layer then the rest of the image could be adjusted leaving the water alone. A mask would also work - in Photoshop there is usually at least 2 ways to accomplish something.

#3 Awesome as-is.

#1 and #2, too busy, over-exposed and washed out. Tons of Post Process to fix, those types of shot need to be planned, early morning or late evening. Luckily this is digital so cram your RAW files into whatever program and make it look not 1pm, if possible. And praying a bit doesn't hurt.

Seriously, 1 and 2. The eye is about 1.5 billion times more attuned to shades then a camera senor (pretty sure that's true, read it on the internet and think I was sober at the time). What you saw I guarentee was far better and more majestic then what your camera took a picture of. In any case both are overexposed and dull. Make #1 and 2 like #3. Not all dark but artistic.

I hope you do not mind my touching up your picture. I use Photoshop only because I have it for my business. You can probably accomplish the equivalent results using most photo-editing programs.

I used the auto-levels, contrast and tone tools to adjust the first picture. The second was edited with the Viveza plug-in which has adjusting tools as in Photoshop but is easier for small areas. In addition to one global adjustment, I manipulated brightness, contrast, saturation and color in eight areas in your photo. Sounds overwhelming. Just takes time to learn the tools, practice to make them second nature and a vision of where you want to go with the photo. This is only one vision; every person has his or her own vision. And you can have multiple visions for the same picture.

The lesson here is that you may have a gold mine. You just have to work it to find out. Good luck and thanks for the opportunity to work on your picture.

These photos are really nice in many ways. However,...

I think the sunset is simply over saturated. I would back it off some.

The foliage shots look dull to me. I would guess it was an overcast day. I don't see any bright sunlight or shadows. They need more saturation and contrast. All I did on the 2nd shot was give the brightness and contrast a big boost.

Even many point-n-shoot cameras will allow you to change some settings for better results. So if you want to use your photos straight out of the camera learn how to make a few creative adjustments.

If your camera doesn't provide for exposure bracketing you can still do it yourself manually. Just find out how to increase and decrease the exposure, put the camera on a tripod or similar, and vary the exposure between successive shots.

Look for a place in your menus where you can change the camera's processing to things like neutral, black & white, and vivid etc. Select something that increases the contrast and makes the colors pop, like "vivid".

If you want to learn how to use "post processing" software shots 1&2 will make great exercises.

Agree with the comments that the foliage pictures lack pop and couldn't help giving it a shot too...I've become fond of the higher saturated look, especially for screen, myself but it isn't everyone's cup of tea.

You can add Contrast Brightness and Saturation to enhance these shots. I founs a little softness in the focus and added some sharpening with PSE6
