Does my Sony a6300 keep a record of what speed and aperature a picture was taken?
If you want to view the data in your camera's LCD, look in the manual on how to display the histogram. That display will show you the data. When viewing a photo on my Nikon D7000, I just toggle the up or down arrows on the OK button to get different display modes for the screen.

๐๐ป๐๐ป๐๐ป. Do note that none of the lens info is recorded on old manual lenses (f-stop, lens name and focal length) but all the other info is there like shutter speed, WB, ISO, etc.
When I bought my Sony A6000 I received a link to this website for a free download of this Sony program called Play Memories. You can view your pictures here, store them, and see the EXIF along with some basic photo editing. It works fine for me, give it a try.
Donโt bother with most of these replies. The basic info you mentioned is available when looking at your photos on the camera. Just cycle thru the views. My A6000 does that by pressing the center toggle either left or up (canโt remember which and in docโs office now).

It seems there are two answers here. One is to read the EXIF data off-camera in some software. The other. is to know the EXIF data on-board the camera. What are the fundamental data (shutter, f-stop, ISO, WB,etc) and the peripheral data (date, time, GPS coords, etc). Wonder what the experts regard as essential.

Technically NO!
The informaation is stored in the file as EXIF information. It is NOT recorded, nor stored in the camera. Once the file is downloaded to another device you cannot find it IN THE CAMERA!
