Totally change. Sony a9 or Leica. Really change and opt for medium format.

Rent to try before you buy. Your own experience with the gear will then guide you to a buying decision.

How much of an investment do you have in Canon glass? Is it L type glass? Think of those factors before you make a decision. When you get right down to it, all of the different bells and whistles found in both Nikon and Canon cameras are just so much fried ice-cream. Neither brand will make you a better photographer. You will make you a better photographer.

the 850 is a fantastic camera and the reports coming from those that have bought one are even better than the hype Nikon fed us. Id go for the 850

Let me tell you about buyer's remorse. I bought a Nikon D4s 16MP for about $6500. A few months later the D5 came out, same price, 20MP.

FYI. Of late there is a 2 year (sometimes a bit less) cycle on those cameras. If you want/need one, buy early on. Lesser models, not as much pressure. Best of luck.

I’m currently using a Pentax K-30. I’m not positive what camera I would purchase tomorrow if I had the money. I am quite certain it wouldn’t be Canikon - the designation would still be K-something

Actually I had it less than a year before the D5 came out. I did save about $500 off the total price too. And then I think back to all of the good shots I got with it before the D5 came out that I might have missed without the D4s. And I've accepted it. However, a friend of mine sold his D4s and bought a D5 because of the 4 more Megapixels in the D5. A good move if money was no object.

But sensor is only one factor...
Sort of reminds me that I used to tell my manager that I wanted to be evaluated based on height and weight...

Perhaps because ultimately most people are outputting 8 bit JPEG images and the casual viewer can't really see any difference at that point.

It doesn't really matter a deal, budget isn't a problem it seems you can afford it, both cameras are capable of excellent results in the right hands but so are many , many cameras.

You might as well give the d850 a try if you don't like it get something else. If your aim is better photography then you need to invest time and effort into yourself. Figure out what you want to say.

Buying a camera is the easy bit, the rest of it is you. If you are not happy with the photos you are producing then the D850 isn't going to make much difference.
