I never want my picture so I always declined.
Just say to them - "No thank you."
Because as Ansel Adams once said (Ok - perhaps a few times) - when a person said = "There are no people in your photographs" ....
Ansel replied .... "There are ALWAYS Two People in my photographs ----- The Viewer and The Photographer".

Depends on the circumstance....if you would like one, "that would be appreciated, thank you". If not "no thank you".
I wonder if it was the same couple that asked me if they could take ours after I took theirs up in the Cowell Redwoods State Park near Santa Cruz?
I always say "No, Thank You to offers unless I have initiated the exchange (Which I do, on occasion to young couples who appear to be honeymooning).
The reason? Because when my wife and I returned from our honeymoon some 55+ years ago and showed our images to the families, my wife's sister asked: "Didn't Peggy go along?"

Actually, I have handed over my camera at times. Depends on my impression of the individual. The last time was to a young Japanese couple on Oahu. I had taken their picture with his camera. Some type of point & shoot, so, he offered to take mine. It was amusing watching him try to figure out why the display was blank, since I almost always use the viewfinder!
I finally got around to setting up a memory with all the right settings to make it work. There's always been a problem because the "Automatic" still left it in BBF and a couple other of my idiotsyncracies. The "guest" is trying to push the button to make it focus and . . .nothing....................................................... Now I just set it to Memory 2 and that eliminates BBF and my other oddities. (No not those oddities.......

Back Button Focus Normally most cameras focus with a half press of the shutter by assigning it to a different button you can get the focus you want recompose and get the shot.

If you are with a group, or someone you know, why not? Otherwise, I am working on a project, and the editor has a professional team to do my head shots. Otherwise, "No, but thanks for offering."
My wife always wants me in a photo. Sometimes I oblige her. I try to get it as a cell phone picture. If the person asked is not a photographer or at least familiar with the basic concept of focus on a DSLR, the shots are ALWAYS out of focus.
