What lens do you use when you walk around?

Use that one, no need to make your vacation more complicated than that.

The 70-200mm f2.8, 24-70mm f2.8, and the nifty fifty f1.2. The 24-70mm f2.8 is the one you may find to be the most convenient to use.

I agree. A beautiful place like Hawaii cries out for a wide angle zoom. Don't forget a CPL

Please forgive the rookie ignorance, but what is CPL?

It polarizes light to reduce reflections, darken skies, smooth foliage, saturate colors... It's a must have accessory.

24-70 on FF, 17-40 on crop (and a CPL would be very useful)

Leave the 7D at home unless you feel you really need it. Put EF 28-300 f/3.5-5.6L on your 5D III and your ready for almost anything.
