Not sure how far interior you are talking about, but if anywhere near Silver Falls State Park (Google it), the 10 waterfalls on about an 8 mile loop are some of the best you will see. And then of course there are the Columbia River Gorge waterfalls. Also not to be missed if you have never seen them.
Regarding an earlier post, "Devil's Churn" may also be referenced as "Devil's Cauldron" if you are having difficulty finding info on it.

If you're in to rustic but like convenience, many Oregon parks have deluxe yurts or cabins for about $80/night. Gotta reserve 9 months ahead because of high demand. We've done several and they all have great photo ops.

Actually Devils Cauldron, north of Tillimook, is different than Devils Churn, near Yachets.
If you are going to Newport a visit to the Oregon Coast Aquarium is a good stop.

That is what "panoramas" are for. Your camera may do it. Recent versions of Lightroom have it built in and it works very well. You can even hand hold and rotate! Lightroom will get it lined up fine!
The Inn at Nye Beach in Newport is super. Newport has a beautiful beach, Yaquina Head Lighthouse, and the Yaquina Bay Bridge along with Newport Marina.
The most important part of your trip is not finding scenic sites. No problem there. The most important part of your trip is still having your gear when you get home, presuming this is a drive trip. I lived in Eugene Oregon and spent many weekends each year up and down the coast. Close to 25 years. Never at a loss for excellent subject. Each coastal town was a day long adventure on the waterfront for each one.
However, the Oregon Coast, (as I suspect most coasts are) is riddled with low income meth heads in search of easy money. Some of the easiest money is breaking glass and popping tourist trunk lids to get at valuables.
The parking at dunes, and waysides are seriously marked for this problem, so I am stating the obvious now before you load up. Sheriff and OSP patrols are as budgets allow, changing with each county. Violence is usually NOT an issue in this instance.
No goods in plain site. A good lock box in a trunk. SUV's are ripe for loss if items are not covered. Remember this, you will often be on the other side of the dunes from your car when shooting. There are few subjects at the coast within view of your car, and the average breaking lasts not much more than a few seconds.
After three significant losses:
Get insurance and plain talk from your agent about loss/claims.
Cover your gear
Don't even take gear you don't plan to use.
My last few years, my shooting-brake was an old Chevy Suburban, as rusty as the criminals use. I had a foam lined steel box bolted inside the rear tail gate to the floor. (One crack head still broke out my rear window). All my locks worked and were always locked. I also have been concealed carry for many years.
Now I expect the locals will jump all over my post here, but thieves don't steal as much from locals, with the tourist traffic that abounds along the coastal highway.
Now I could have named dozens of great places to visit, but I want you to have your camera gear intact for the whole trip.
Lastly, you'll get plenty of sites listed here, and you will still try to catch every eyefull you see along the road, like the under the bridge entry/exit that snakes in and out of Depoe Bay. You stand on the highway about fifty feet above the boats bouncing in the passage, and the crewmen trying to gain sturdy footing. If you miss that one, all is lost. Nice restaurants, Rocky Shoreline, Crashing Waves... All from one vantage point.
Tens, perhaps hundreds of such place on the Oregon Coast. Tooooooooooo Many to list.
You'll be planning your next trip all the way back to Seattle.
Crater Lake and Oregon Caves will easily add two days to a trip from the Coast and are EASILY their own trip. Plus, once you take that departure, there is so much to add to just those two.
I heartily discourage breaking up a Coastal trip for Crater, and the East Side of Oregon. Those could be well over a week on their own.

YES!, but no in the same way as the Coast is. Eastern Oregon, where I now live (Bend Oregon) is a daylong motorcycle trip for me to do the Rim of the Crater at Crater Lake, when the snow allows. It is not an easy jog from the Coast. The Oregon Caves Trip is a long old windy road... again great motorcycling. From the Coast... I think not.
Do Eastern Oregon as a dedicated trip, and include the real Eastern Oregon adventure and scenic spots... Lakes, huge reservoirs, Mountains... and no, you can't see the Pacific Ocean from my home in Central Oregon.

Correctomundo, and in fact there are a couple of other "devils" locations on the Oregon Coast. All man killers. Play safe on the rocks.
