Telephoto Lenses, Take More Flattering Portraits? At what FLength?

Nikon considers 105mm the perfect length for head and shoulders. That would be accurate and flattering both.

On a lighthearted note, if your subject has huge ears that stick out, a 50mm will shrink them for you.

And if you have a pig that isn't snout worthy, the 50mm can fix that too.

Generally as a good starting point, mild telephoto is what you should go with but it really come down to you!

What do you think like?
Use your thoughts about whatever coverage you want. Is it a head shot, half body, full body, etc.
What is the style you're going for?

After all, how the lighting hits the subject can also make a huge difference. You might want to change a lens or not since there really is no set lens as each person and condition is different.

You are going to have to evaluate all the variable and over time, make the choice yourself.

My preferences are 105mm on my Nikon. 150mm on my Hasselblad, and 210mm on my 4x5.
