Welcome! I'm just learning myself on a lot of this stuff--but horses make good practice "models" to take pictures of :)
You got that right. When you think you have the perfect shot they stick their tounges out or crook an ear or decide to poop. They are worse than kids I think.

Well have not heard a lot on this thread from people but a lot going on, on the other one I started "Best Camera for Action Shots of Horses". Check it out lots of suggestions.

LOL - too many to read through all of them. Personally, all I can say is, for action shots, you'll want large aperture, large ISO capability, fast shutter. Oh, and a zoom that will get your desired frame from your expected distance. Beyond that, it's whatever equipment you're comfortable with.
I subscribe to the "go to a local camera store, explain your needs, try out equipment and decide from there". I usually buy from these stores since they take the time to get what you want and the good ones will steer you away from a bad purchase. (and they're usually run by photographers)
