Had buttermilk from cornbread so for dinner, having breakfast : buttermilk pancakes w real maple syrup & bacon.
I call smell it here in Indianna.

1 cup yellow stone-ground cornmeal,1 cup unbleached all-purpose flour( 1 1/2 cornmeal to 1/2 cup flour my preference) 2 tsp baking powder, 1/2 tsp baking soda, 3 tbsp. sugar ( northern cornbread sweet, southern not )1/2 tsp salt. Mix all dry ingredients together then push up side of bowl to make a well. Crack 2 lg eggs into well & stir, add 2/3 cup buttermilk & 2/3 cup whole milk and mix lightly, add 2 tbsp. unsalted melted butter and stir to just combined, a few lumps OK, don`t over mix. Pour batter into 9" greased pan, bake in pre-heated 425 degree oven for 25 min. or until top is golden brown & lightly cracked & edges have pulled away from side of pan.Let cool on wire rack. Serve warm. Wrap leftover in foil & can be reheated next day @ 350 degrees for 10-15 mins. Enjoy.
