Cut it up and plant each piece that has 'eyes' and you will get a good crop of spuds!!

Did this for many a year. Now I find it easier to just buy them. Even at that they grow eyes before I get them all eaten.
Potatoes are already planted in Mississippi!But I imagine in Minnesota,it is still rather cold. Our winter has been so mild this year,our apple tree budded out in January... WE have had some really cold weather this week and it still looks ok.
