It's good with about half as much red cabbage as green, and some shredded carrots and slivered green onions. Now I am hungry and I have all those things in the fridge, too. I should go make some!

Don, you are online late, you're as bad as I am. :-P
So many ways to make cole slaw. I usually go for quick and easy... finely shred half a smallish green cabbage, and 1/4 of a smallish red cabbage with a knife or your preferred vegetable-shredding device. Peel and grate one or two carrots. I use a grater with medium sized holes. Thinly slice on the bias however many green onions your palate tells you would taste good. Some fresh chopped flat leaf parsley is nice to put in if you have some, but it's not mandatory.
Toss veggies together in a bowl with dressing of your choice.
Some people like an oil and vinegar dressing, such as two tablespoons cider vinegar, four tablespoons olive oil, a teaspoon of mustard, 1/4 teaspoon of celery seed and salt and pepper to taste. Other people prefer a creamy dressing. You can use ranch dressing, or mix some mayonnaise with some lemon juice, salt and pepper, and maybe some buttermilk or plain yogurt. A lot of people add a bit of sugar to their cole slaw dressing. Sometimes I do, sometimes I don't. Mix the dressing together and taste it. If you like it it will probably taste great on your cole slaw. Bon appetit!
