What determines whether you shoot an image with your D600 or your D7100? Width of shot? Depth of field?

Today, I use the D600 fitted with the AFS 80~400 G VRII lens for birds in flight, most the time. I normally have this rig slung around my neck and will use it to get the first few shots of any thing that I might miss with the D7100 & 300 f4 + TC 1.4, which is now used with a tripod (I am practicing with a tripod for when I get my 500 f4), which I hope is not too far in the future.
That said and to answer your question more specifically, the D600 being an FX body is my choice of body during early mornings and at sunset, when light may be an issue, it handles higher ISO settings better than the D7100 with remarkable alacrity, It also will focus faster than the D7100, which is what I need for my birds in flight. The VR on the new 80~400 is also amazing, once you learn its idiosyncrasies, which makes hand holding with slow shutter speeds in poor light conditions possible, if the subject is not moving too much and you don't want to push the ISO.
When light is good, I will use the D7100 in its 1.3 DX crop mode most the time.
