With the 7100 you should be able to shoot up to ISO 1600 without significant noise or reduction in quality. The f2.8 is quite heavy--you might want to consider the 18-200 or 18-300 DX lens instead, as they should be able to capture indoor photos quite easily.

And I'll put in another plug for the Canon SX50 -- an outstanding travel camera which can be carried no-hands in a Zing bag on your belt.

I've been to both cities. I would take the 18-200mm and a fast lens the 35 mm. I assume you'll be using public transportation so you don't want to carry all that equipment. Unless you're doing long exposure photography why do you need a tripod.Also in Paris be careful of pickpockets. I was warned and had a pocket book with a zipper on the outside and separate zippered compartment on the inside. On the subway in Paris some one who I stopped tried to steal my wallet.

I visited London last week all I took was my camera with a 35mm prime lens. I was able to take lots of good photos even in the low light as evening approached. I was able to carry the camera round my neck and could conceal it in my jacket when using public transport or in crowded streets etc. I do carry a Canon SX260 P&S incase I need a wider view or some zoom but it was not used.

I am going to the UK and Belgium this summer. I too am taking my 18 200 and a 12-24. That is all. A nice walk around and a wide angle for scenery. I debated between the 18 200 and a 28 75. But the 18 200 won out. I think!

I have a Lowepro and it holds one camera with lens and another body and 1 24-105mm cannon lens. Recharger and 3 batteries for Mark iii.A lot of SD cards, enough for 5k exposures.This bag is for travel to and from only . It fits well even on and Embriair. The Domke bag is used as a walk around, it even holds water if needed. Tripod is in luggage and not used unless we are driving where it stays in car.A good zoom such as 28-300 handles most situations. Single focal lengths were for traveling in 60' and 70's with film cameras. Today light is might. Iam only 72 and we try to do two big ones a year. We went to both of those cities last year . You will love them. All though my wallet was lifted in the Opera area in Paris, I had no problems camera wise.
I found that my 18/55 lense to be great in the Louvre and Orsey museums as well as good wide angle shots. My 55/200 covered the rest very well. I did have my Sigma 10/20mm and only used it in cathedrals just to experiment. That was fun but not necessary.
Have a wonderful trip and don't carry large amounts of cash and no credit cards. Give that to your wife.

Can you stash me away in your suitcase? I agree with everyone posted that "less is more". I think that if you have so much gear you'll miss the moment that you're trying to capture because you're putting everything together to set up your shot.

It's a bit unfair to point the finger at staff. It's common for bag thieves to empty them in a bathroom or under table to avoid the risk of being nabbed with it. Even leaving the bag in a cistern.

You will most certainly find a bag to carry all of your gear but I think you are making a mistake planning to do so. You would be much better off taking your best "walk-around" lens and perhaps one other. This will save you a lot of hassle getting in and out of your bag and more, importantly, mitigate the fact that you will be exposing some pretty expensive gear to possible theft or loss. I've traveled to both cities and have found that the Tamron 18-270mm lens on my Canon 7D was (is) the perfect lens for 99% of the photos I chose to take. I have also been to both cities and agree. A good walk around lens and maybe a 50 or 35mm prime, a good point and shoot and you should get some fantastic pictures!

My wife was picked in the London Underground (wallet-cash found in nearby trash bin), and I was picked in Paris subway car (wallet, cash intact, found on floor of the car). Lessons: SECURE valuables, and if picked, search nearby.

P. S. I now carry a skinny travel billfold, insert a short comb inside (to catch on my pocket, if picked), and carry in my front pocket. The billfold came with a chain attached, but I found that too cumbersome to use.
