It's always good advice to format the sd card in the phone.

So you weren't able to format it in the camera because it didn't recognize it? Did you format it at all?

Only thing I can think of, when you purchase a new card it often comes with software, there might have been a conflict with the software on board the SD card. You reformatted it in another device, which wiped out that software. It's working now so be Happy Happy.

"Ultra" doesn't mean much to me, I'm afraid, but is the card marked also as SDHC or SDXC? See page 67 of your manual

If you go to the Setup Menu, to Format Memory Card - is that option greyed out, or can you still use it? If you can use it, try that.
Always format your memory cards in-camera, never on a computer or other device, that is asking for trouble.

I wonder if the camera will give you a "no card" message if the card is locked with the little slide on its side?

Sounds strange. I too have the Nikon D5100 camera and, as a first choice I tend to buy Sandisk Extreme or Ultra SD/SDHC Cards; - have NEVER had a problem with them. (My second brand choice is Transcend, - their Ultimate range). As someone else mentioned ALWAYS format your card before use; - if your camera doesn't recognise the new card then format it to FAT32 on your PC/Laptop - then ionsert the card in your camera. - If your camera now recognises the Card format it AGAIN in camera. Hope this helps.
