Not always some snapshots become very nice portraits. I will use my own post on page 1 for an example, all except for the butt shot were snapshots to begin with. With some cropping, dodging and burning they became portraits.

Well, for me a "snapshot" is something gotten quickly and without planning. That being said, I have seen some that were taken as "snapshots" that turned out to be very good "informal" or "environmental" portraits.
I like the definition at the beginning that basically says that a "portrait" is an image of someone or some thing.
Then portraits can be broken down into various categories: Formal (usually in a studio), Informal, Environmental, and Casual. Each has their place, and there are some who feel if it isn't a perfect "Studio Formal" that it isn't a portrait at all.
If you have a photo of a person, and it captures 'who' that person is, then IMHO it is a good portrait whether it be 'formal', 'informal', etc.......

The first one is a photo I took about 20 yrs ago. I found it in pretty bad shape so I scanned it into Ps and had some fun.
