Here's a picture that I took today and I am thinking of getting an EF 75-100mm lense. I used an EF 500mm with a 2x converter. Should I make the purchase in order to get better definition and clarity for pictures like this?

The 75-100mm will not be long enough, even with the 2x converter.

An EF 500mm?? Hard to get much better than that.
I'm going out on a limb but I think you must mean an EF 50mm.
You need to get closer, either with your feet or with a longer lens so yes, a 75-300mm will be advantageous.

I don't think that photo was made with a 500mm. lens. Did you tripod the shot? Any time you use a doubler, you dramatically decrease the light that gets to the sensor- meaning that longer exposures would be necessary.
You are obviously a great distance away from your subject and need substantial magnification and stability for this kind of shot.
Unless you want to use a telescope and adapted camera, I don't think you'll be happy unless you physically get closer to the cross.

You used a 1000mm set-up to take that picture, and you're wonder whether you should get a 75 - 100mm lens to get greater clarity. Is that right? You may get greater clarity but you won't be able to see the cross any more, it will be so small.

Thank you for the advice and I do have a rather peculiar lense so I understand the reluctance to believe that it is an EF 500mm. Do you think some one on this site might have a used EF75 300mm?

It is on Sewanee Mountain on The University of the South's campus. I was about 15 miles away from it in the valley. I suppose I was expecting too much of my oldie but goodie lense :-D

Thank you. I'm glad I don't have to run out and buy a new lense but then again I haven't a clue what a telescope camera adapter looks like, where to get one (used preferrable), and all the other jazz that I might need to know before I make a purchase.

You just threw us by saying you wanted a 75-100mm.

The EF 500mm f/5.6L is not peculiar by any stretch of the imagination. You could try an EF 800mm f/5.6L IS USM
