You're right about backgrounds at equestrian events. People who sell images to contestants usually find a spot with a reasonable background, a colorful jump and a good view of the horse starting his jump (like the last image) and park there and shoot images from that spot. If you are documenting the event in general, then control of depth of field is the only real tool you have to limit "busy" images. I've had to do that for carriage driving competitions.
